Pasta Salad

1 cup screw pasta ( I used 2 cups and it was way too much)

Woolworths Danish Style feta cheese

black olives, pitted and sliced

cucumbers, sliced and quarted

1/2 tsp mixed herbs

Dressing:

1 cup mayonnaise

Salt and pepper, to taste

1 tsp sugar

1/4 tsp vinegar

Boil pasta until al dente. Drain and set aside.

In a bowl, add in the mayo, salt and pepper, sugar, vinegar and mix well.

I prefer to add the pasta to the dressing. That way it gets coated nicely and it won’t be too dry.

Add in the feta, cucumber and olives. Mix well. Sprinkle the mixed herbs.

Chill in Fridge before serving.

It gets a bit dry in the fridge so you can either have the pasta,cucumber, feta and olives kept ready in one bowl and have the dressing kept separately, mix it together just before serving. Or you could just add extra mayo to the entire salad before serving. 

I normally add in about 4 Wooleorths cherry tomatoes (halved) but didn’t have any at home. It adds more colour and taste to this dish.

This can be eaten on its own or goes well with steak!
