5 – 6 giant black mushrooms
4 cloves garlic, chopped
Olive oil
Salt and black pepper, to taste
1 small onion, chopped
250 ml fresh cream
1 Green chilli, chopped (optional – 4 taste)
1 tsp parsley
Cook pasta according to packet instructions. Drain and set aside.
Preheat oven to 220°C.
Place mushrooms on a tray. Sprinkle over salt and black pepper, a little chopped garlic and a drizzle of olive oil. Roast for 15 – 20 minutes till cooked through.
Heat oil in pan. Add in the onions and cook till soft. Add the rest of the garlic and fry for a minute. Add in the fresh cream and allow to simmer. Season with salt and black pepper and green chilli.
Add in the pasta and mix until pasta is well coated in the sauce.
To assemble, place mushroom on plate and with pasta. Sprinkle over parsley and a little black pepper.
